										<content:encoded><![CDATA[<h4>Biti čokolatijer sigurno svakom sladokuscu deluje kao posao iz snova, ali ipak su retki oni koji mogu da se u ovakvoj vrsti karijere ostvare. Za to je potrebno mnogo više od ljubavi prema čokoladi, mada je ona svakako dobra polazna tačka. To je poziv koji zahteva mnogo kreativnosti, umetničkog i dizajnerskog talenta, preciznosti, strpljenja, ali i prefinjeno nepce.</h4>

<p>Danas imamo čast da Vam predstavimo intervju sa čovekom koga je 2016. godine <i>National Geographic Travel</i>, zajedno sa njegovom majkom i čokolaterijom koju vode, svrstao na listu 10 najboljih čokolatijera na svetu. Đorđo Demarini, po profesiji prvenstveno grafički dizajner, odlučio je da sva svoja znanja i sposobnosti usmeri na čokoladu, diznajnirajući  neodoljive, neponovljive, unikatne ukuse od kojih potom stvara prava remek-dela, izdižući ovaj zanat na potpuno novi nivo umetnosti, luksuza i hedonizma.</p>

<h5><b>Nakon studija grafičkog dizajna i vizuelnih umetnosti, pohađali ste Ekol Čokolat (školu čokoladnih umetnosti) u Kanadi. Kako je došlo do toga da postanete čokolatijer? Zbog čega je došlo do tog zaokreta?</b></h5>

<div>U vreme kada sam završavao studije, moja majka je započela posao u ovoj branši, i uvideo sam priliku da izrazim sav svoj umetnički talenat kroz čokoladu, dizajnirajući svaku od njih poput umetničkog dela. Koristim neke grafičke tehnike i još uvek imam svoj stari grafički blok za crtanje i dizajniranje čokolade.</div>

<h5><b>Šta Vas je najviše privuklo ovoj karijeri? Da li je to bio uticaj Vaše majke, gospođe Elene Basagiote, koja je osnivač Rosalen čokolaterije?</b></h5>

<div>Zaista volim čokoladu, ne samo da uživam u njoj, nego i da dizajniram svaku kao komad nakita.  Moja majka obožava sve u vezi sa kuvanjem i poslastičarstvom, i mislim da sam svoju strast otkrio kada sam počeo da joj pomažem u poslu.</div>

<h5><b>Kako implementirate svoje znanje grafičkog dizajna u kreiranje čokolade? Na koji način Vam je Vaše prethodno obrazovanje pomoglo u čokolatijerstvu?</b></h5>

<div>Mnogo mi je pomoglo. Krenuo sam sa dizajniranjem logoa kompanije, a potom i sa biranjem boja koje će predstavljati naš biznis. Tu su i načini pakovanja, kao i osmišljavanje strategija za reklamiranje na društvenim mrežama. Zatim sam prešao na dizajniranje naših kolekcija bombona, tabli i poslastica veoma otmenog i gurmanskog stila. Poznavanje grafičkog diznajna Vam zaista pruža strukturu i znanje koje možete primeniti na čokoladu radi postizanja odličnih estetskih rezultata.</div>

<h5><b>Od kruške i ruzmarina, do Amareta sa bademima ili Roze šampanjca sa ružinom vodicom, kombinacije ukusa u Rosalenu su zaista preukusne i jedinstvene. Kako dolazite do recepata? Da li ih sami smišljate?</b></h5>

<div>Zajedno smo odlučivali koje kombinacije ukusa će se naći na našem meniju. Recepti su napravljeni sa lokalnim sastojcima, ali i nekim inostranim kako bismo mogli da ponudimo široku paletu ukusa u jedinstvenim mešavinama. One su te koje daju karakter našim nepredvidljivim umetničkim delima sa peruanskim kakaom. Stvaranje znatiželje kod naših mušterija bilo je ključno za razvijanje našeg posla.</div>

<h5><b>Uz peruanski kakao najvišeg kvaliteta, možemo videti da samo najbolji sastojci, poput vanile sa Madagaskara ili ličija iz Kine, mogu postati deo Rosalen čokolada. Možete li nam reći nešto više o materijalima, sastojcima i tehnikama koje koristite? Kako ih birate?</b></h5>

<div>Uvek mora biti sastojaka koje je na našem tržištu teško pronaći, uz poštovanje veoma visokih standarda kvaliteta, da bi naše kreacije zaista mogle da se cene kao posebne. Što se tiče tehnika, koristimo kako tradicionalne, tako i moderne, uključujući umetnost kao najviši prioritet.</div>

<h5><b>Ko je Đorđo izvan sveta čokolade i dizajna? Da li imate neke hobije, kako se opuštate, u čemu uživate?</b></h5>

<div>Meditacija mi je izvor inspiracije za nova dela. Takođe volim astrologiju i proučavanje zvezda i njihovog uticaja na ljudske živote. Volim i plivanje koje je za mene idealan sport. Toplo ga preporučujem svima.</div>

<div>Da. Za venčanja često pripremamo specijalne bombone i dekoracije. Uglavnom smo privlačili klijentkinje, recimo Prve Dame naše zemlje, kao i poznate ličnosti koje vole da daju oduška sebi, ali i da počaste svoje goste i prijatelje.</div>

<h5><b>Šta biste, iz svog bogatog iskustva, izdvojili kao svoj omiljeni komad koji ste napravili?</b></h5>

<div>Omiljene su mi bombone sa marakujom i limunskom travom. Kada se upare sa peruanskim <i>Torontel</i> vinom to je pravi raj. Klasici poput Amareto kranča su isto na vrhu moje liste. Trufle sa algarobinom (sirupom od crnog rogača) i kafom su takođe moja čokoladna opsesija, potpuno su neodoljivi.</div>

<h5><b>Šta je najlepši, a šta najteži deo Vašeg posla?</b></h5>

<div>Najteži deo jeste samo dizajniranje kako bi se dobila savršena čokolada koju moji klijenti očekuju. Najviše volim da ih oslikavam i bojim, kao i onaj predivni trenutak kada se postigne izuzetan ukus i izvanredna kombinacija za nepce.</div>

<div>Mi svoj posao radimo iz ljubavi. Kada vidim osmeh na licu svoje mušterije, osećam da sam zaista ispunio svoju misiju.</div>

<div>To su crna čokolada sa 70 procenata, i mlečna sa 45 procenata kakaoa. Što se tiče porekla, u Peruu su mi omiljene one iz regija <i>San Martin, Piura</i> i <i>Cusko</i>. a volim i kakao iz Venecuele i sa Jamajke.</div>

<p>Pre nego što se malo bolje upoznamo sa time kako postati <strong>čokolatijer</strong> i šta čokolatijer radi, vrlo je bitno znati razliku <strong>između čokolatijera i proizvođača čokolade</strong>. Iako na prvi pogled možda deluje kao da je u pitanju isto zanimanje, za obe ove profesije potrebne su različite veštine i znanja. Proizvođač čokolade uz pomoć posebne opreme za pečenje, mlevenje, prečišćavanje i temperiranje, od zrna kakaoa pravi čistu čokoladnu smesu od koje uglavnom u formi <a href="https://mojacokolada.com/kako-pravilno-cuvati-cokoladu/"><strong>čokoladne table. </strong> </a><strong>Čokolatijer</strong> meša i prerađuje tu već napravljenu čokoladnu smesu, kako bi dobio <strong>čokoladne slatkiše različitih svojstava, ukusa i oblika</strong>. <p><strong>Čokolatijeri</strong> svoje školovanje uglavnom započinju kao poslastičari, a onda svoje znanje unapređuju pohađanjem posebnih kurseva i seminara. Iako na našoj teritoriji nema nijedne, u svetu postoji nekoliko škola za proizvođače čokolade i čokolatijere, kao što je <strong>Ekol čokolada</strong> &#8211; profesionalna škola čokoladne umetnosti (&#8220;<em>Ecole Chocolat Professional School of Chocolate Arts&#8221;</em>), u Vankuveru (<em>Kanada</em>) i San Francisku (<em>Kalifornija, SAD</em>), kao i Čokoladna akademija (&#8220;<em>The Chocolate Academy</em>&#8220;), koja ima nekoliko škola širom sveta (<em>u Evropi, Aziji i Americi</em>). U ovim školama se uči o <a href="https://mojacokolada.com/putevi-cokolade-prvi-deo/">istoriji čokolade</a>, savremenim tehnikama gajenja i prerade kakaovca, hemijskim svojstvima čokolade, temperiranju i oblikovanju čokolade, recepturi čokoladnih poslastica na bazi ganaša ili fondana, kao i o marketingu i veštinama upravljanja preduzećem.</p>
<p>Praktične veštine koje čokolatijer mora da savlada su temperiranje, oblikovanje i vajanje čokolade.</p>
<p>Temperiranje podrazumeva zagrevanje i hlađenje čokolade kako bi ona dobila različita svojstva kao što su sjaj ili način na koji se čokolada lomi.</p>

<p>Oblikovanje i vajanje možda deluje kao ista stvar, ali oblikovanje podrazumeva pravljenje čokoladnih komada određenog oblika tako što se tečna čokolada nalije u kalup i ostavi da se ohladi i stegne, dok vajanje podrazumeva pravljenje čokoladnih skulptura od različitih čokoladnih komada, kao i ukrašavanje ovih komada dekorativnim radom po njima. Čokolatijeri rade u proizvodnim pogonima proizvođača čokolade, kao i u poslastičarnicama, dok se neki od njih odlučuju na pokretanje sopstvenog posla i otvaranje poslastičarnica i fabrika čokolade ili držanje obuka za buduće poslastičare i čokolatijere.</p>
<p>Za najbolje čokolatijere postoji svetsko takmičenje (&#8220;<em><strong>The World Chocolate Masters&#8221;</strong></em>), prvi put održano <strong>2005. godine.</strong></p>
