<h3 class="wp-block-heading"><strong>Tradicionalne vrednosti i savremena proizvodnja</strong></h3>



<p><strong>Freestyle Trade </strong>je porodično preduzeće osnovano 1997. godine, a od 2007. godine usmereno je na proizvodnju svežih, kratkotrajnih kolača. Od 2014. godine kompanija proširuje svoj asortiman na ručno rađene smrznute torte premium kvaliteta, koje osvajaju kupce svojom bogatom aromom i prefinjenim sastavom.</p>



<p>Sveže kolače distribuira na teritoriji Beograda, dok smrznute torte nalaze put do kupaca širom Srbije. Posebna pažnja posvećena je kvalitetu proizvoda, pri čemu se koristi najfinija čokolada i sastojci vrhunskog porekla, čime se osigurava neponovljiv ukus.</p>

<p>Ono po čemu je <strong>Freestyle Trade</strong> posebno jeste to da od 2007. godine, ovo preduzeće dosledno sprovodi politiku zapošljavanja osoba sa invaliditetom, pružajući im priliku za profesionalni razvoj i dostojanstven rad. <p>Volim da radim sa<strong> čokoladom</strong> jer ona traži strpljenje i potpuno prisustvo. Uživam da je transformišem u razne&nbsp; forme, u one, u kojima nismo navikli da je vidjamo. <strong>Čokolada </strong>je, kao material, jako adaptibilna, i ima osobinu da joj ti novi oblici i boje vrlo zabavno i lepo stoje. Istovremeno, može se raditi na njenom ukusu i kvalitetu, u kulinarskom smislu. Pazim, da me oblici ne zavedu, da ukus bude jednako važan, da&nbsp; radim&nbsp; samo sa&nbsp; visoko kvalitetnom <strong><a href="https://mojacokolada.com/sta-je-zdravije-mlecna-cokolada-ili-crna-cokolada/" title="Pitali smo nutricionistu: Šta je zdravije mlečna čokolada ili crna čokolada?">crnom čokoladom</a>,</strong> sa visokim procentom kakaa. To otežava oblikovanje, ali rezultat koji oduševljava sva čula, na kraju se isplati. Namera mi je, i da je, u nekim oblicima, dopunjujem suvim voćem, orašastim plodovima začinima, da možda, napravim neke kombinacije svojih ukusa. Tako da&nbsp; se osim, što poželite da je pojedete očima,&nbsp; osetite dobro sa tim šta unosite u svoje telo ili poklanjate dragim ljudima.&nbsp;</p>

<p><br><br>Zato moje čokolade nemaju ambiciju da porastu&nbsp; u veću proizvodnju, ili neki veliki posao. Namera mi je da ih pravim u malim porudžbinama, da ih prezentujem putem malih, intimnih prezentacija, za ljude kojima će to činiti radost, koji umeju da razmišljaju čokladno, i&nbsp; koji će u toj kutiji videti i skrivenu vrednost. <br></p>

Za to je potrebno mnogo više od ljubavi prema čokoladi, mada je ona svakako dobra polazna tačka. To je poziv koji zahteva mnogo kreativnosti, umetničkog i dizajnerskog talenta, preciznosti, strpljenja, ali i prefinjeno nepce.</h4>

<p>Danas imamo čast da Vam predstavimo intervju sa čovekom koga je 2016. godine <i>National Geographic Travel</i>, zajedno sa njegovom majkom i čokolaterijom koju vode, svrstao na listu 10 najboljih čokolatijera na svetu. Đorđo Demarini, po profesiji prvenstveno grafički dizajner, odlučio je da sva svoja znanja i sposobnosti usmeri na čokoladu, diznajnirajući  neodoljive, neponovljive, unikatne ukuse od kojih potom stvara prava remek-dela, izdižući ovaj zanat na potpuno novi nivo umetnosti, luksuza i hedonizma.</p>

<h5><b>Nakon studija grafičkog dizajna i vizuelnih umetnosti, pohađali ste Ekol Čokolat (školu čokoladnih umetnosti) u Kanadi. Kako je došlo do toga da postanete čokolatijer? Zbog čega je došlo do tog zaokreta?</b></h5>

<div>U vreme kada sam završavao studije, moja majka je započela posao u ovoj branši, i uvideo sam priliku da izrazim sav svoj umetnički talenat kroz čokoladu, dizajnirajući svaku od njih poput umetničkog dela. Koristim neke grafičke tehnike i još uvek imam svoj stari grafički blok za crtanje i dizajniranje čokolade.</div>

<h5><b>Šta Vas je najviše privuklo ovoj karijeri? Da li je to bio uticaj Vaše majke, gospođe Elene Basagiote, koja je osnivač Rosalen čokolaterije?</b></h5>

<div>Zaista volim čokoladu, ne samo da uživam u njoj, nego i da dizajniram svaku kao komad nakita.  Moja majka obožava sve u vezi sa kuvanjem i poslastičarstvom, i mislim da sam svoju strast otkrio kada sam počeo da joj pomažem u poslu.</div>

<h5><b>Kako implementirate svoje znanje grafičkog dizajna u kreiranje čokolade? Na koji način Vam je Vaše prethodno obrazovanje pomoglo u čokolatijerstvu?</b></h5>

<div>Mnogo mi je pomoglo. Krenuo sam sa dizajniranjem logoa kompanije, a potom i sa biranjem boja koje će predstavljati naš biznis. Tu su i načini pakovanja, kao i osmišljavanje strategija za reklamiranje na društvenim mrežama. Zatim sam prešao na dizajniranje naših kolekcija bombona, tabli i poslastica veoma otmenog i gurmanskog stila. Poznavanje grafičkog diznajna Vam zaista pruža strukturu i znanje koje možete primeniti na čokoladu radi postizanja odličnih estetskih rezultata.</div>

<h5><b>Od kruške i ruzmarina, do Amareta sa bademima ili Roze šampanjca sa ružinom vodicom, kombinacije ukusa u Rosalenu su zaista preukusne i jedinstvene. Kako dolazite do recepata? Da li ih sami smišljate?</b></h5>

<div>Zajedno smo odlučivali koje kombinacije ukusa će se naći na našem meniju. Recepti su napravljeni sa lokalnim sastojcima, ali i nekim inostranim kako bismo mogli da ponudimo široku paletu ukusa u jedinstvenim mešavinama. One su te koje daju karakter našim nepredvidljivim umetničkim delima sa peruanskim kakaom. Stvaranje znatiželje kod naših mušterija bilo je ključno za razvijanje našeg posla.</div>

<div>Omiljene su mi bombone sa marakujom i limunskom travom. Kada se upare sa peruanskim <i>Torontel</i> vinom to je pravi raj. Klasici poput Amareto kranča su isto na vrhu moje liste. Trufle sa algarobinom (sirupom od crnog rogača) i kafom su takođe moja čokoladna opsesija, potpuno su neodoljivi.</div>

<div>Najteži deo jeste samo dizajniranje kako bi se dobila savršena čokolada koju moji klijenti očekuju. Najviše volim da ih oslikavam i bojim, kao i onaj predivni trenutak kada se postigne izuzetan ukus i izvanredna kombinacija za nepce.</div>

<p>Njegovom timu je trebalo dobre 3 godine da usavrši recepturu za njegove unikatne ručno pravljene čokoladne trufle, koristeći isključivo organski prirodne i sveže sastojke.<br />
Da bi svojim čokoladnim specijalitetima dao poseban čar, koristio je posebnu vrstu kakao zrna koja potičku sa vulkanskog ostrva<strong> Sao Tome</strong> iz Južnog Atlantika. Ova posebna vrsta kakao zrna vešto je probrana tako da sadrži voćne, aromatične karakteristike, a da bi se dobio još unikatniji ukus, kombinovana je sa čuvenim Škotskim kremom koji se dobija od posebnih vrsta krava. Njegove čokoladne praline i trufle ne sadrže ni trunku veštačkih emulgatora, konzervansa ili bilo kakvih drugih veštačkih dodataka, samo čisto pažjivo probrane prirodne sastojke pomešane uz brojne začine i prirodne arome, tako da čine pravi somotski neponovljiv ukus jedne od najfinijih čokolada u svetu.</p>
<p>Kada se na to doda i posebno dekorisanje svake ove čokoladne praline, te sve to upakuje u elegantna, prefinjena pakovanja, dobija se kompletno zaokružen unikatni, čokoladni doživljaj koji nikoga ne ostavlja ravnodušnim.</p>
<p>Njegovi čokoladni proizvodi su dobili najviše ocene na svetskim takmičenjima i festivalima, a njegova čokolaterija “Iain Burnett Highland Chocolatier” je dobitnik i nekoliko međunarodnih nagrada &#8211; <strong><em>Scotland Excellence Award 2014</em></strong>, <em><strong>World Gold Chocolate Award 2015</strong></em>, <em><strong>World Chocolate Awards 2016</strong></em>, <em><strong>Great taste Award 2017</strong></em>, itd</p>

Ono što ove čokolade čini izuzetnim nije samo njihov ukus već i neodoljivo lepo urađena pakovanja koja mame svojim izgledom.</p></blockquote>
<p><strong>Gina Hardy</strong> (42 godine) rođena je u Singapuru, Australija, i na početku karijere je završila prava i nameravala da postane advokat. U čokoladni biznis ušla je sasvim spontano, pokušavajući da impresionira svoj tadašnjeg dečka praveći mu čokoladne trufle. Kakav fantastičan način da očarate izabranika svog srca, zar ne? <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /> Kako joj je to pošlo za rukom, jer je tadašnji dečko sada otac njene dece, osmelila se i upustila u svet pravljenja čokolade. Sada uspešno uz pomoć naravno svog muža, vodi svoj biznis u Port of Spain, glavnom gradu Trinidada i Tobaga, na Karibima, i specijalizovala je svoju čokolateriju za tzv<strong><em> bean to bar čokolade</em></strong>. U prevodu doslovce to bi bio nešto kao <strong><em>Od kakaovog zrna do table čokolade</em></strong>. Ovakav naziv označava koncept rada kod kojeg ne koriste gotove kakao smese u prahu, već se poštuje ceo proces koji podrazumeva nabavku kakao zrna, koja se onda dalje melju, sitne i koristi za pravljenje kakao odnosno čokoladne smese.</p>

<p>Čokoladne trufle koje je tada pravila su bile od probrane belgijske čokolade, sa visokim procentom čokoladnog butera,  a kako su se pokazale kao hit, napravila je od njih svojevrstan brend &#8211; <strong>Trini truffle</strong>, i sada ih možete pronaći u kombinacijama sa rumom, kokosom i belom i crnom čokoladom. Biznis je u početku vodila iz kuhinje svog doma, da bi ubrzo sa porastom potražnje njenih proizvoda iznajmila veći prostor za potrebe svoje čokolaterije. Danas ona pravi čokolade sa preko 50 ukusa, koje uključuju i trinidadske voćne praline, od bele i čokolade sa posebnim začinskim dodacima. I to sve &#8211; ručno pravljene!</p>

<p>Prva čokolaterija je predstavljala porodičan biznis i otvorena je u ulici Grand Palace. Godiva je u to vreme ponudila tržištu jednu vrstu inovativnosti u proizvodnji čokolade što je ubrzo postao standard i to ne samo u ukusu njihovih čokolada, već i u različitosti aroma, elegantnim i modernim pakovanjima. Počevši biznis kao lokalna prodavnica, Godiva je vrlo brzo razvila prodaju ne samo i u ostalim delovima Belgije, već i u drugim gradovima Evrope, a ubrzo posle drugog svetskog rata i na tlu Amerike, a zatim i Azije.  Tako je ovaj brend vremenom sačuvao svoju notu autentičnosti i originalnosti koji ga danas svrstavaju u najbolje svetske proizvođače čokolade.</p>

<p>Godiva danas ima 5 glavnih čokolatijera koji rade zajedno kao tim u istraživanju i razvijanju novih formula pravljena čokolade i otkrivanju novih ukusa. Da bi se napravio novi ukus jedne čokolade, dakle razvila nova formula, za ceo proces testiranja i usaglašavanja svih sastojaka je potrebno skoro godinu dana.</p>
<p>Svake godine Godiva napravi 30-40 novih ukusa i čokoladnih kombinacija, i 11 sezonskih kolekcija, i proizvode preko 290 miliona čokolada.<br />
Godiva je posebno poznata po tome što jagodama uvaljanim u čokoladu, što predstavlja posebnu sezonsku poslasticu, pogotovu za dan Zaljubljenih.</p>

<p>Ono što ovu čokoladu čini veoma karakterističnom je to što je<strong><a href="https://mojacokolada.com/cokolade-zanimljivih-oblika/"> čokolada</a> </strong>pravljena sa mlekom kamila! To je i prva čokolada ikada proizvedena sa kamiljim mlekom.<strong> Kamilje mleko</strong> je poznato po svojoj hranljivosti i tome što je bogato vitaminima B i C, ima manje zasićenih masti i skoro 10 puta više gvožđa u sebi od kravljeg mleka. Po svojoj strukturi je gušće od kravljeg ili kozijeg mleka i kao takvo bolje za pravljenje čokolade. Arapi ga redovno koriste, a ljudi koji su ga probali misle da je ukusnije od kravljeg mleka.</p>

<p>Sam prozvođač svoje čokolade predstavlja kao najfinije čokolade od kamiljeg mleka koje simbolizuje duh arapskog sveta i predstavlja unikatan proizvod vrhunskog kvaliteta.</p>

										<content:encoded><![CDATA[<h4>Danas ćemo vam predstaviti jednu krajnje neobičnu, odnosno bolje reći neuobičajenu čokoladu pod nazivom <strong>Dark Love</strong> (<em>Mračna ljubav)</em> koja se prodaje i pod nazivom <em>Unusual chocolate</em>.</h4>
<p>Kao što se i po samom nazivu već može naslutiti radi se o gotik stil čokoladi, ručno pravljenoj čokoladi, ne samo neobičnog i mračnog imena, već i krajnje bizarnih oblika, te pakovanja koje prati i podražava ovaj stil.</p>

<p>Naime, same čokoladice su napravljene u obliku crnog srca, belog srca, ali i minijaturnih grobnih kovčežića sve zajedno sa krstićem. Pored toga je moguće pronaći i zakrpljeno srce ružičaste boje. Sam koncept deluje pomalo morbidno, ali verujemo da će se ipak nekima i svideti. Čokoladice su po nekim ocenama ljubitelja čokolade veoma ukusne. Neke su punjene kokosom, neke marzipanom, zatim amareto sirupom, a neke pepermintom. Sve je to zapakovano u vrlo lepu kutiju crne boje, sa nazivom u beloj boji, ispisanim gotskim fontom i belom mašnicom. Da, dobro ste čuli, od petog septembra zvanično postoji četvrta vrsta čokolade, tzv. rubin čokolada. <p>Naglasak se naravno stavlja na specifičnoj prirodnoj ružičastoj boji, koja je dobijena posebnim postupkom procesiranja zrna bez dodavanja veštačkih ukusa i boja. Lagana i kremasta tekstura se nalazi negde između bele i mlečne čokolade, dok je ukus blaga mešavina bobičastog voća i mlečne čokolade, ni previše sladak, ni puno gorak. E sad, najbolji deo cele priče jeste taj što ovu čokoladu možete da je jedete u mnogo većim količinama, jer ima daleko manje kalorija od mlečne i crne čokolade.</p>

<p>Ovim otkrićem, kompanija <a href="http://www.bensdorp.com/"><strong>Barry Callebaut</strong></a> je pogodila u srce svakog čokoljupca, koji je sa grižom savesti konzumirao svoju omiljenu poslasticu.</p>
<p>Iz kompanije takođe poručuju da je rubi čokolada uglavnom namenjena &#8220;milenijalcima&#8221;, odnosno onima koji su rođeni nakon 01. januara 2001. godine. Zapravo, oni smatraju da upravo ružičasta čokolada odgovara željama današnjih generacija koje su prilično odane hedonizmu. &#8220;Prirodna je, živopisne boje, hedonistička, stvorena da ugodi, ali ima autentičnost <em>čokolade&#8221;,</em> rekli su iz <strong>&#8220;Barry Callebaut-a</strong>&#8220;.</p>

<p>Inače, ovo je prva vrsta čokolade koja je &#8220;izmišljena&#8221; nakon 1930. godine kada je kompanija <strong>Nestle</strong><strong> </strong>predstavila svoju prvu <strong>belu čokoladu</strong><strong>. </strong>Naučnici su na “rubin” čokoladi radili više od 13 godina, otkada je kompanija otkrila crveni kakao. Rezultat je svakako vredan pažnje &#8211; roze čokolada, koja je za početak predstavljena na svečanosti u Šangaju, ali još uvek nije dostupna javnosti. Prodaja je započeta na veliko, svim proizvođačima širom sveta, tako da je samo pitanje kada će se pojaviti u prodaji.</p>

<p>Da li ćemo za nekih 80, 90 godina dobiti još jednu vrstu čokolade? Možda, a možda će zbog želje čoko-industrija da idu u korak sa vremenom, ti pronalasci biti i češći…U svakom slučaju, ne bunimo se, kada god došla dobrodošla!</p>
